There is nothing that I love more than eating meals at home with my family (2 daughters + hubby) and the family favorite is definitely my lasagna recipe. Since I lost my mother to cancer over 12 years ago, we will be spending this Mother’s Day together with my immediate family and this family favorite is on the menu. The best part about the recipe is how simple it is to make but, oh so tasty. You don’t even have to cook the lasagna noodles beforehand (yay!).

This recipe also works great when someone has a baby or a death in the family as it works perfect to reheat and folks are always so impressed that you worked so hard (secret: it’s so easy)!

For the recipe, I use Victoria Premium Marinara Sauce. The ingredients are on the front of the label which is so unique and you know exactly what you are eating. They use the highest quality ingredients and I love that they are all familiar ingredients that you can feel good about feeding your family.

5-Ingredient Easy Spinach Lasagna for Mother’s Day

Serving Size: 12

Ingredients

  • 24 oz Victoria Premium Marinara Sauce
  • 24 oz 1% cottage cheese
  • 8 oz organic spinach
  • 9 strips whole wheat lasagna noodles (uncooked)
  • 3 cups Italian blend cheese

Preheat oven to 350 degrees. In a 9 x 13 glass baking dish put a light layer of marinara sauce on the bottom to prevent sticking. To begin layering process Place 3 lasagna noodles on the bottom, top with a layer of sauce, then 1/3 of the cottage cheese, 1/3 of the spinach and 1/3 of the cheese. Repeat two more times. Place a piece of aluminum foil over the top and bake for 30 minutes. Remove foil and bake for an additional 30 minutes or until done. Let cool 10 minutes.
