You’ve definitely eaten them white, might have tried them orange, but what about purple? Yes purple – and yes PURPLE POTATOES! Beets and eggplant aren’t the only purple vegetables out there – the Peruvian Potato is the new purple veggie to add to your plate. Not only are these potatoes naturally creamy and rich in flavor, but they also have a texture that holds its shape well with most cooking methods.
