You’ve definitely eaten them white, might have tried them orange, but what about purple? Yes purple – and yes PURPLE POTATOES! Beets and eggplant aren’t the only purple vegetables out there – the Peruvian Potato is the new purple veggie to add to your plate. Not only are these potatoes naturally creamy and rich in flavor, but they also have a texture that holds its shape well with most cooking methods. And let’s not forget about their great health benefits. These potatoes are not only pretty to look at but they also provide a hearty dose of the antioxidant, anthocyanin, the same antioxidant that gives blueberries their rich color. Anthoyanin has strong anti-cancer and heart-protective effects, boosts the immune system, and helps protect against age-related memory loss. The darker the color of the skin, the more antioxidant rich the potato is!

So what are you waiting for? Fit these Purple Peruvian Potatoes into your meals.

Here’s How:

The Peruvian Potato is great for mashing, making potato salad, roasting, and adding to soups, stews, and the Crockpot!
