High Protein Pork Tacos

I love to tacos just like everyone else. I don’t explore as much at home with new taco recipes as I should but thrilled that I created this yummy one that is super simple and packs the flavor into every bite.

I used the Flatout [1] Foldit Protein flatbread to boost protein and help satisfy cravings.

High Protein Pork Tacos

Ingredients

  • 4 oz ground pork
  • 1 Flatout Fold-It
  • 2 radishes, thinly sliced
  • 1 cup mushrooms
  • 1 scallion, thinly sliced
  • 1 cup cabbage, thinly sliced
  • 2 teaspoons low-sodium soy sauce
  • 1 teaspoon ginger
  • 1 teaspoon cinnamon
  • 1 tablespoon light mayo
  • 1 tablespoon hoisin sauce

Directions:

Heat 1 tsp olive oil in large pan over medium heat. Add mushrooms, cabbage and scallions. Cook about 3 minutes. Add pork, ginger and cinnamon to vegetables and cook about 4 minutes. Add soy sauce and set aside.

In a small bowl, combine mayo and hoisin sauce with 2 tsp water. Stir until smooth.

Wrap the flatbread in a damp paper towel and microwave on high for 10 seconds.

Add pork and vegetable mixture to 1/2 of flatbread, then add scallions and radishes. Drizzle sauce over and then Foldit and enjoy!
