Who doesn’t love a delicious bowl of gazpacho during summertime? But, most folks want super simple recipes in summer so they can enjoy most of their time with family and friends. Well, I got just the recipe for you and I’m super excited to share!
I created a recipe that is not only delicious but also nutritious. The secret to this recipe is that you use Victoria Organic Toasted Garlic marinara sauce as the base. I love working with them since they put their ingredients on the front of the label. Simple, real ingredients. No water, paste or sugar added to their pasta sauces.
You’ve got to give this yummy recipe a try as I know you will not be disappointed. Enjoy.
- 1 24 oz jar Victoria Organic Toasted Garlic Marinara Sauce
- 1 cucumber, chopped
- 1 red bell pepper, chopped
- 1/4 cup red wine vinegar
Pour the marinara sauce into a medium bowl. Place the cucumber and red bell pepper into a blender and pulse for about 5 seconds. Add the blended mixture to the marinara sauce and then add the red wine vinegar. Stir well. Chill for 90 minutes and then serve.
