I’m always experimenting with quinoa and here’s one that I think you will love as much as I do! The best part is how simple it is to prepare and with the clean ingredients you can feel good about eating it since it’s healthy!
1 cup quinoa, rinsed
1 can (15 oz) low sodium chicken broth
12 cherry tomatoes, sliced in half
1 can (15 oz) garbonzo beans
1 tablespoon balsamic vinegar
2 tablespoons lemon juice
1/4 cup red onion, diced
2 oz feta cheese, crumbled
Bring the quinoa and broth to a boil. Then, cover and simmer on medium-high for about 12 minutes until quinoa is cooked and liquid is absorbed. Allow quinoa to cool. Add beans, tomatoes, balsamic vinegar, lemon juice and red onion. Sprinkle feta on top.
