Fall Family Dinner Favorites

Fall is just around the corner which hopefully means more family dinners for many of us. When I am making dinner for my family, I always want to make sure we have a good source of protein. I like working with the folks at Laura’s Lean Beef since their cattle are raised without hormones or antibiotics. Their beef is also naturally lower in fat and cholesterol and an excellent source of protein. Laura’s 96% Lean Ground Round or Ground Sirloin are easily substituted into your family favorites that you are already making and you get a whopping 24 grams of protein in only 4 oz.

My favorite times to use lean ground beef for family dinners are for Taco Night (typically Friday), meatloaf, spaghetti and here is a recipe for my Taco Pizza. I love making super quick, simple, healthy, and delicious recipes.

Taco Pizza

Makes 6 servings 

1 lb. Laura’s 96% Ground Lean (or Ground Sirloin)

½ package low-sodium taco seasoning

1 12-inch round whole wheat pizza dough

1 can (16 oz.) nonfat refried beans

2 medium tomatoes, chopped

½ cup part-skim mozzarella cheese

½ cup cheddar cheese

Extras:

Light sour cream

Salsa

Preheat oven to 350°F. In a nonstick skillet, brown beef over medium heat with taco seasoning according to package directions. Spray a pizza pan with nonstick cooking spray. Place whole wheat pizza dough on pizza pan. Cover with a layer of non-fat refried beans. Put beef on pizza and then sprinkle with both cheeses. Bake for about 12-15 minutes or until cheese melts. Top with tomatoes. Serve with salsa and light sour cream if desired.
