Guacamole

Makes 8 Servings

Ingredients

3 high quality avocados (Hass)

1 lemon, juiced

1 tomato, diced

3 cloves garlic, chopped

1 tsp cumin

½ teaspoon sea salt

2 tablespoons cilantro, chopped

Directions:

1. Cut avocados into halves. After removing seeds, scoop pulp out and place into small bowl; use fork to mash avocado.

2. Gently stir in lemon juice, tomato, garlic, cumin, sea salt, and cilantro. Cover and refrigerate 1 hour prior to serving.

Avocado and Mango Salsa

Serves 6-8

1/4 cup lime juice

1/2 teaspoon sea salt

1 small jalapeno pepper, core and ribs removed, finely diced

1/4 cup red onion, 1/4″ diced

2 cups ripe avocado, 1/4″ diced (Hass)

1 ripe mango, peeled and 1/4″ diced

2 tablespoons fresh mint leaves, very thinly sliced

In a large bowl, whisk lime juice, salt, and pepper. Dice the onion and soak in ice water. While onion is soaking, cut avocado, mango, and mint and add to the bowl with the dressing. Drain the red onion and add to the avocado mixture; gently toss. Cover and chill. Season with salt to taste and serve cold.
