Meet My 2011 Interns!

As a busy entrepreneur and mom, I love sharing my experiences with others, and especially working with bright young future professionals in the nutrition field. I’ve been working with a team of virtual interns (all over North America!) for a few years now and enjoy the learning we can do from each other.

I’m thrilled to introduce you to my 2011 intern team! They are rock star interns! I’m so fortunate to have had interns working with me for multiple terms – this is Kristen’s 4th term with me, Megan’s 3rd term, and Marsi’s 2nd term. Major: Dietetics & Communications
Internship: Coordinated Program at the University of Connecticut
Hometown: Stamford, CT
Favorite Food from our region and/or ethnicity: As a New England-er, I love any and all seafood!
Favorite Exercise: Zumba, Bikram yoga, ballet, and boot camp!

Career Aspirations: As a Registered Dietitian, I hope to open a private practice (for nutrition counseling and consulting), work as a spokesperson, write healthy living books/cookbooks, develop fitness programs…even host a healthy cooking show! My overall goal is to communicate and connect with individuals to improve their health and well-being through simple and effective means!

Favorite Food from our region and/or ethnicity: With the summer season approaching, I eagerly await the return of fresh Ontario produce – strawberries and tomatoes especially!
Favorite Exercise: Hiking in the parks with my dog, Bikram yoga, and weight training

Career Aspirations: I am interested in so many different aspects of dietetics and have yet to narrow down my interests! In clinical dietetics, I’m intrigued by ICU and post-operative nutrition management, as well as diabetes education. I am also a tireless advocate for local food, sustainable food systems, and effective food policy, and will hopefully start down a career path in this area. I’m looking forward to being an official R.D. later this year!

School: Cornell University ’11
Major: Nutritional Sciences & Dietetics Concentration
Internship: I just got matched with Brigham and Women’s Hospital. I will begin the internship in October!
Hometown: Great Neck, New York
Favorite Food from our region and/or ethnicity: As a New Yorker – I love bagels (of course whole wheat!) with cream cheese, lox, capers and onions!
Favorite Exercise: I love a combo of cardio & weight lifting. My new favorite type of exercise is ZUMBA! (When I’m home I go with my mom every week!)

Career Aspirations: I have a strong interest in Sports Nutrition. I love cooking and baking and would love to improve my culinary skills! (Hopefully become the next “healthy” Food Network star!) I also have a strong desire to teach! I LOVE nutrition and can’t wait to take the next step in my dietetics career!

Career Aspirations: Currently clinical dietetics has my attention. I love that the right course of nutrition can cure or treat so many diseases and lead to the reduction of medication intake. I would love to be a part of helping both the young and old live a better quality of life by helping them understand the impact food can make!

Major: Finance & Marketing (undergraduate), Dietetics (graduate)
Internship: Next year!
Hometown: East Greenwich, RI
Favorite Food from our region and/or ethnicity: I’m Italian, so pasta and seafood!
Favorite Exercise: I cycle in 100 mile races to raise money for individuals with cancer.
