Okra was first discovered in Ethiopia around the 12th Century B.C. and became popular throughout Africa and the Middle East. It came to America through the slave trades and became very popular in the South.
Okra, like many vegetables, is high in nutrients and low in calories and fat. A have cup of cooked okra yields 20 calories, is high in Vitamin C, as well as an adequate source Vitamin A, calcium, and iron.
Okra is very versatile and can be used in a variety of ways. It can be used to thicken stews or soups, or can be eaten by itself as steamed, boiled, pickled, or fried.
Baked Okra
Ingredients
- Okra
- Whole wheat flour
- Panko bread crumbs
Directions
- Preheat your oven to 375.
- Wash okra and cut off the ends. Slice the okra horizontally into round pieces.
- Douse okra pieces in flour.
- Cover with the Panko breadcrumbs.
- Line a baking sheet with parchment paper and spread okra on the baking sheet.
- Cook for 15-20 minutes, turning it halfway.
